Description

A hearty beef rib soup with fresh carrots, corn, and radishes.


Ingredients

  • 2 lbs beef ribs
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 1 cup corn, fresh or frozen
  • 1 cup radishes, quartered
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef ribs over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Pour in the beef broth and bring to a boil.
  4. Reduce heat and simmer for 1.5 hours.
  5. Add carrots, corn, radishes, and soy sauce.
  6. Season with salt and pepper.
  7. Simmer for another 30 minutes until vegetables are tender.
  8. Garnish with fresh parsley before serving.
