Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 200ml sherry
  • 400g canned tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft.
  3. Stir in the garlic, carrots, and beef mince, cooking until the meat is browned.
  4. Pour in the sherry and let it simmer for 2-3 minutes.
  5. Add canned tomatoes, tomato paste, thyme, salt, and pepper.
  6. Pour in the beef broth and stir well.
  7. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
