Ingredients

  • Ground beef: 1 lb (450 g)
  • Corn tortillas: 8-10 tortillas
  • Enchilada sauce: 2 cups
  • Shredded cheese: 2 cups (about 200 g)
  • Onion: 1 medium onion, diced
  • Bell peppers: 1 cup, diced
  • Black beans: 1 can (15 oz or 425 g), drained and rinsed
  • Fresh cilantro: 1/4 cup, chopped
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Prepare the ground beef by cooking it in a skillet over medium heat, breaking it into smaller pieces, and seasoning with salt and pepper until browned.
  2. Add diced onion and bell peppers to the skillet and sauté for 3-4 minutes until softened.
  3. Combine the cooked beef and vegetables with black beans and half of the enchilada sauce, simmering for 2-3 minutes.
  4. Preheat the oven to 375°F (190°C) and assemble the enchiladas by rolling the beef mixture in corn tortillas and placing them seam-side down in the skillet.
  5. Pour the remaining enchilada sauce over the tortillas, sprinkle with cheese, and bake for 15-20 minutes until the cheese is melted and bubbly.

Notes
