Description
A hearty and nutritious beef barley soup that warms you up on a cold day.
Ingredients

- 1 lb beef chuck, cut into 1-inch pieces
- 1 cup barley
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 8 cups beef broth
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion, carrots, and celery to the pot; sauté until softened.
- Stir in garlic and cook for 1 minute.
- Add barley, beef broth, bay leaf, and browned beef to the pot.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Season with salt and pepper before serving.
Notes
- This soup can be made ahead and frozen.
- Adjust the thickness by adding more or less broth.
- Feel free to add other vegetables like peas or corn.
