Ingredients

  • 4 cups beef broth
  • 1 cup red wine
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the beef roast with salt and pepper.
  3. In a large pan, sear the roast on all sides until browned.
  4. Remove the roast and add the onion and garlic to the pan.
  5. Cook until softened, then add the red wine and scrape the bottom of the pan.
  6. Add the beef broth and Worcestershire sauce, then return the roast to the pan.
  7. Cover and roast in the oven for about 2 hours or until tender.
  8. Remove the roast and let it rest before slicing.
  9. Strain the liquid to make the au jus.
