Ingredients

Instructions

  1. Drain and rinse soaked beans.
  2. In a large pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for 1 minute.
  4. Add beans, vegetable broth, diced tomatoes, cumin, and paprika.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Season with salt and pepper.
  7. Serve hot.
