Ingredients

- 2 medium sweet potatoes, peeled and diced
- 1 lb boneless chicken breast
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup corn, cooked
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss sweet potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- While sweet potatoes are roasting, season chicken with salt and pepper.
- In a skillet, cook chicken over medium heat until fully cooked, about 6-7 minutes per side.
- Once cooked, shred the chicken and mix with BBQ sauce.
- Assemble your bowl with roasted sweet potatoes, BBQ chicken, corn, and avocado slices.
- Garnish with fresh cilantro.
