Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine mixed vegetables, cooked quinoa, cheese, and broth.
- Add garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish.
- Bake for 25-30 minutes or until heated through and cheese is bubbly.

- For a vegan option, omit cheese or use vegan cheese.
