- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 cup sweet and sour sauce
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the chicken pieces with salt, pepper, and olive oil.
- Place the chicken in a baking dish.
- Add pineapple, bell pepper, and onion on top of the chicken.
- Pour sweet and sour sauce and soy sauce over the mixture.
- Toss everything to coat evenly.
- Bake for 25-30 minutes until the chicken is cooked through.
- Serve hot over rice or noodles.
Notes
- Adjust the sweetness by adding more or less sauce.
- Use fresh vegetables for better flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
