Ingredients

  • 1 lb salmon fillet, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 avocado
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tbsp cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix salmon, breadcrumbs, parsley, onion, garlic, egg, salt, and pepper.
  3. Form the mixture into meatballs.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes until cooked through.
  6. In a blender, combine avocado, Greek yogurt, lime juice, and cilantro.
  7. Blend until smooth.
  8. Serve meatballs with the avocado sauce.
