- 2 cups shredded cooked chicken
- 1 cup shredded cheese
- 1/2 cup salsa
- 8 small corn tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix the chicken, cheese, salsa, cumin, garlic powder, and salt.
- Warm the tortillas in the microwave for 30 seconds to make them pliable.
- Place a spoonful of the chicken mixture on each tortilla and roll them tightly.
- Brush the taquitos with olive oil.
- Place them seam-side down on a baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Serve with extra salsa or guacamole.
Notes
- You can use rotisserie chicken for convenience.
- Adjust spice levels by adding jalapeños or chili powder.
- Store leftovers in an airtight container in the fridge.
