A rich and creamy dessert combining the flavors of Baileys Irish Cream and cheesecake.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup Baileys Irish Cream
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup sour cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth.
- Add powdered sugar and mix well.
- Pour in Baileys and vanilla extract, and mix until combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream until smooth.
- Pour the filling over the crust in the springform pan.
- Bake for 50-60 minutes or until set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Use a water bath for even baking.
- Chill the cheesecake overnight for best flavor.
- Top with whipped cream or chocolate shavings if desired.
