Ingredients

  • 200g mushrooms, sliced
  • 23 Thai bird chilies, smashed
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a pot, bring chicken broth to a boil.
  2. Add lemongrass, kaffir lime leaves, and galangal. Simmer for 10 minutes.
  3. Add chicken slices and mushrooms. Cook until chicken is done.
  4. Stir in coconut milk, fish sauce, and chilies. Heat through.
  5. Remove from heat and add lime juice.
  6. Serve hot, garnished with fresh cilantro.
