Authentic Thai coconut chicken soup
Ingredients

- 1 lb chicken breast, sliced
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 2 stalks lemongrass, chopped
- 4–5 kaffir lime leaves
- 3–4 slices galangal or ginger
- 200g mushrooms, sliced
- 2–3 Thai bird chilies, smashed
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- In a pot, bring chicken broth to a boil.
- Add lemongrass, kaffir lime leaves, and galangal. Simmer for 10 minutes.
- Add chicken slices and mushrooms. Cook until chicken is done.
- Stir in coconut milk, fish sauce, and chilies. Heat through.
- Remove from heat and add lime juice.
- Serve hot, garnished with fresh cilantro.
