Description
This is a traditional Thai coconut soup with chicken.
Ingredients

- 2 cups chicken broth
- 1 can coconut milk
- 1 cup sliced mushrooms
- 1 stalk lemongrass, cut into 2-inch pieces
- 4 kaffir lime leaves
- 1 inch galangal, sliced
- 1 pound chicken breast, sliced
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon sugar
- Chili paste to taste
- Cilantro for garnish
Instructions
- In a pot, combine chicken broth and coconut milk.
- Add lemongrass, kaffir lime leaves, and galangal.
- Bring to a boil and simmer for 10 minutes.
- Add chicken and mushrooms, cook until the chicken is done.
- Stir in fish sauce, lime juice, sugar, and chili paste.
- Serve hot, garnished with cilantro.
