Ingredients

- 2 cups jasmine rice
- 1 cup coconut milk
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 pound green beans
- 1 cup shiitake mushrooms
- 1 pound chicken, diced
- 2 tablespoons ginger, minced
- 3 cloves garlic, minced
- 1/4 cup green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Rinse the jasmine rice under cold water.
- In a pot, combine rice, coconut milk, and water. Cook until rice is tender.
- In a pan, heat sesame oil and sauté ginger and garlic.
- Add chicken and cook until browned.
- Add mushrooms and green beans. Stir-fry for 5 minutes.
- Mix in soy sauce and green onions. Cook for another 2 minutes.
- Serve chicken stir-fry over coconut rice and sprinkle with sesame seeds.
Notes
- Adjust soy sauce for preferred saltiness.
- Can substitute chicken with tofu for a vegetarian option.
- Serve with chili sauce for added spice.
