Ingredients

  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 pound green beans
  • 1 cup shiitake mushrooms
  • 1 pound chicken, diced
  • 2 tablespoons ginger, minced
  • 3 cloves garlic, minced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse the jasmine rice under cold water.
  2. In a pot, combine rice, coconut milk, and water. Cook until rice is tender.
  3. In a pan, heat sesame oil and sauté ginger and garlic.
  4. Add chicken and cook until browned.
  5. Add mushrooms and green beans. Stir-fry for 5 minutes.
  6. Mix in soy sauce and green onions. Cook for another 2 minutes.
  7. Serve chicken stir-fry over coconut rice and sprinkle with sesame seeds.

Notes

  • Adjust soy sauce for preferred saltiness.
  • Can substitute chicken with tofu for a vegetarian option.
  • Serve with chili sauce for added spice.
