A refreshing Asian-inspired cold pasta salad perfect for summer gatherings.
Ingredients

- 8 oz pasta (spaghetti or rice noodles)
- 1 cup bell peppers, thinly sliced
- 1 cup cucumber, diced
- 1 cup carrots, grated
- 1/2 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp ginger, grated
- 1 tsp garlic, minced
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine cooked pasta and vegetables.
- In a separate bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic.
- Pour dressing over pasta and vegetables. Toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.

- Customize with your favorite vegetables.
- Add grilled chicken or shrimp for protein.
- Store leftovers in an airtight container in the fridge.
