Instructions
- Preheat the oven to 350°F (175°C).

- Add egg and vanilla, mixing until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients.
- In another bowl, beat cream cheese until smooth, then fold in diced apples and cinnamon.
- Drop spoonfuls of cookie dough onto a baking sheet.
- Make an indentation in each cookie and fill with the cream cheese mixture.
- Bake for 12-15 minutes until golden.
- Allow to cool before serving.
