Delicious apple crisp mini cheesecakes topped with a buttery oat crumble.
Ingredients

- 1 cup cream cheese
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup apples, peeled and diced
- 1 tsp cinnamon
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1/2 cup oats
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix cream cheese, sugar, and vanilla until smooth.
- Add sour cream and mix until combined.
- In another bowl, combine apples, cinnamon, and set aside.
- In a third bowl, mix graham cracker crumbs with melted butter.
- Press the crumb mixture into the bottom of mini cheesecake pans.
- Pour the cream cheese mixture over the crusts.
- Top with the diced apples.
- In a bowl, mix oats, brown sugar, and remaining butter to make the crumble.
- Sprinkle the crumble over the apple layer.
- Bake for 25-30 minutes until set.
- Allow to cool before serving.
