- 2 cups apple cider
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped

- 2 bay leaves
Instructions
- Preheat your oven to 325°F (163°C).
- Season the short ribs with salt and pepper.
- In a large oven-safe pot, heat olive oil over medium heat.
- Sear the short ribs on all sides until browned.
- Remove ribs and set aside. Add onion, garlic, and carrots to the pot.
- Sauté until the vegetables are softened.
- Pour in apple cider and add thyme and bay leaves.
- Return the short ribs to the pot, cover, and transfer to the oven.
- Cook for 3 hours or until ribs are tender.
- Serve hot with sauce from the pot.
