A classic Italian antipasto salad loaded with flavors.
Ingredients

- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, pitted
- 1/2 cup salami, sliced
- 1/2 cup mozzarella balls
- 1/4 cup roasted red peppers, sliced
- 1/4 cup artichoke hearts, quartered
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- In a large bowl, combine the greens, tomatoes, olives, salami, mozzarella, roasted red peppers, artichokes, and red onion.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 30 minutes before serving.
Notes
- This salad can be made ahead and stored in the refrigerator.
- Feel free to add other ingredients like pepperoncini or capers.
