  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your air fryer to 360°F (182°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff the mixture into each bell pepper.
  5. If using, top with shredded cheese.
  6. Place the stuffed peppers in the air fryer basket.
  7. Cook for 12-15 minutes or until the peppers are tender.
