A healthy and delicious recipe for air fryer stuffed bell peppers filled with vegetables and spices.

- 4 large bell peppers
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your air fryer to 360°F (182°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
- Stuff the mixture into each bell pepper.
- If using, top with shredded cheese.
- Place the stuffed peppers in the air fryer basket.
- Cook for 12-15 minutes or until the peppers are tender.
