Air fryer potato skins are a deliciously crispy appetizer that everyone will enjoy.
Ingredients

- 4 medium russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- 2 green onions, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Scrub the potatoes and pierce them with a fork.
- Cook the potatoes in the air fryer for 35-40 minutes or until tender.
- Let the potatoes cool slightly, then slice them in half and scoop out some flesh.
- Brush the insides with olive oil and season with salt and pepper.
- Air fry the potato halves for another 5-7 minutes until crispy.
- Remove and fill each half with cheese and bacon.
- Return to the air fryer for 3-5 minutes until cheese melts.
- Top with sour cream and green onions before serving.
Notes
- Use your favorite cheese for variation.
- For a vegetarian option, skip the bacon.
- Store leftovers in an airtight container in the fridge.
