Description
A simple recipe for light and fluffy lemon poppy seed muffins made in an air fryer.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup plain yogurt
- 1/4 cup vegetable oil
- 1 large egg
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
Instructions
- In a bowl, mix flour, sugar, poppy seeds, baking powder, baking soda, and salt.
- In another bowl, combine yogurt, oil, egg, lemon juice, and lemon zest.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Preheat the air fryer at 320°F (160°C) for 5 minutes.
- Line muffin cups with liners and fill them with the batter.
- Place the muffin cups in the air fryer and cook for 12-15 minutes.
- Check for doneness with a toothpick; it should come out clean.
Notes
- Store muffins in an airtight container.
- They can be frozen for up to 3 months.
- Adjust lemon juice to taste for more or less tartness.
