Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the eggplant into rounds.
- In a bowl, mix olive oil, garlic powder, salt, pepper, and Italian seasoning.
- Toss the eggplant slices in the mixture until well coated.
- Place the eggplant slices in the air fryer basket in a single layer.
- Cook for 15-20 minutes, flipping halfway through, until tender and golden.
- Remove and serve hot.
