Ingredients

- 1 medium eggplant, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
- 1/2 cup breadcrumbs
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix olive oil, garlic powder, onion powder, salt, and pepper.
- Toss eggplant slices in the oil mixture.
- Coat the eggplant with breadcrumbs.
- Place the eggplant slices in the air fryer basket in a single layer.
- Cook for 15 minutes, flipping halfway through.
- Check for crispness and cook for an additional 5 minutes if necessary.
