A simple recipe for coconut crusted chicken fillets made in an air fryer.

- 2 chicken fillets
- 1 cup shredded coconut
- 1/2 cup breadcrumbs
- 1/2 cup flour
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
Instructions
- Preheat your air fryer to 400°F (200°C).
- Mix shredded coconut, breadcrumbs, salt, pepper, and garlic powder in a bowl.
- Set up a breading station with flour, beaten eggs, and the coconut mixture.
- Dredge each chicken fillet in flour, dip in eggs, then coat with the coconut mixture.
- Place the coated chicken fillets in the air fryer basket.
- Cook for 12-15 minutes, flipping halfway through, until golden brown and cooked through.
- Serve warm.
