Crispy coconut crusted chicken breast made in an air fryer.
Ingredients

- 2 chicken breasts
- 1 cup shredded coconut
- 1/2 cup breadcrumbs
- 1/2 cup flour
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix shredded coconut, breadcrumbs, salt, pepper, and garlic powder.
- Coat each chicken breast in flour, then dip in beaten eggs.
- Press the chicken into the coconut mixture until well coated.
- Place chicken in the air fryer basket in a single layer.
- Cook for 12-15 minutes, flipping halfway through.
- Check that the internal temperature reaches 165°F (74°C) before serving.

- Serve with a dipping sauce of your choice.
- Adjust cooking time based on the thickness of the chicken.
