Ingredients

- 1 cup grated carrots
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup vegetable oil
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, mix grated carrots, flour, sugar, brown sugar, and oil.
- Add baking powder, baking soda, cinnamon, nutmeg, salt, and vanilla extract. Mix well.
- If using, fold in chopped walnuts.
- Form small balls with your hands and place them in the air fryer basket.
- Air fry for 10-12 minutes or until golden brown.
- Let them cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- These bites can be frozen for longer storage.
