- 1 lb shrimp, peeled and deveined
- 1 cup quinoa
- 2 limes, juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a bowl, combine shrimp, lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper.
- Marinate shrimp for 10 minutes.
- Heat a skillet over medium-high heat.
- Add marinated shrimp to the skillet.
- Cook shrimp for 2-3 minutes on each side until pink and cooked through.
- Serve shrimp over quinoa and garnish with cilantro.
