Quick and easy veggie skewers made in an air fryer.
Ingredients

- 1 cup bell peppers, diced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes
- 1 cup mushrooms, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat air fryer to 400°F (200°C).
- In a bowl, combine veggies with olive oil, garlic powder, salt, and pepper.
- Thread veggies onto skewers.
- Place skewers in air fryer basket.
- Cook for 10-12 minutes, shaking halfway through.
- Check for desired tenderness and serve hot.
Notes
- Use any combination of vegetables you like.
- Soak wooden skewers in water for 30 minutes before using to prevent burning.
- Adjust cooking time based on the size of the vegetable pieces.
