Quick and easy air fryer stuffed bell peppers ready in 15 minutes.


Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup shredded cheese

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix rice, black beans, corn, tomatoes, chili powder, and cumin.
  4. Stuff the mixture into each bell pepper.
  5. Top with shredded cheese.
  6. Place the stuffed peppers in the air fryer basket.
  7. Cook for 10-12 minutes until peppers are tender.
  8. Remove and let cool for a few minutes before serving.

  • Use any color bell pepper you prefer.
