Quick and crispy air fryer eggplant fries ready in 15 minutes.
Ingredients

			- 1 medium eggplant, cut into fries
 - 1 cup breadcrumbs
 - 1/2 cup grated Parmesan cheese
 - 2 large eggs
 - 1 teaspoon garlic powder
 - 1 teaspoon paprika
 - Salt and pepper to taste
 
Instructions
- Preheat the air fryer to 400°F (200°C).
 - Slice the eggplant into fry shapes.
 - In a bowl, beat the eggs.
 - In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
 - Dip eggplant fries in the egg, then coat with the breadcrumb mixture.
 - Arrange the fries in the air fryer basket in a single layer.
 - Cook for 10-12 minutes, shaking halfway through.
 - Check for crispiness and cook longer if needed.
 
Notes
- For extra flavor, add Italian seasoning to the breadcrumb mix.
 - Serve with your favorite dipping sauce.
 - Store leftovers in an airtight container in the fridge.
