Quick and easy coconut shrimp made in an air fryer.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix shredded coconut, breadcrumbs, garlic powder, salt, and pepper.
  3. Set up a breading station with flour, beaten eggs, and the coconut mixture.
  4. Dredge each shrimp in flour, dip in egg, then coat with coconut mixture.
  5. Place shrimp in the air fryer basket in a single layer.
  6. Spray shrimp lightly with cooking spray.
  7. Cook for 8-10 minutes or until golden brown, flipping halfway through.
  8. Serve warm with dipping sauce.
