A hearty and nutritious soup made with a variety of beans.


Ingredients

  • 1 cup 15 bean mix
  • 8 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 teaspoons cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the 15 bean mix and soak overnight.
  2. In a large pot, heat a little oil and sauté the onion, carrots, and celery for 5 minutes.
  3. Add garlic and cook for another minute.
  4. Add soaked beans, vegetable broth, diced tomatoes, cumin, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours.
  6. Add salt and pepper to taste before serving.

Notes

  • Store leftovers in the fridge for up to 5 days.
  • This soup freezes well.
